In the weeks leading up to your pickup, we’ll contact you to discuss how you’d like your beef cut. This is your chance to personalize your order—choosing the types of steaks, roasts, and other cuts that best suit your cooking style and family needs.​

A quick note before we get started: you’ll need adequate freezer space to store your order. We recommend a minimum of 4 cubic feet per quarter cow. That’s enough to comfortably fit all your vacuum-packed cuts in an organized way, without overcrowding your freezer.​


UNDERSTANDING BEEF QUARTERS

A cow is typically divided into two main sections: the front quarter (forequarter) and the rear quarter (hindquarter). Each section offers distinct types of cuts:​

  • Front Quarter – Includes cuts like chuck, brisket, and rib. These are typically well-marbled and rich in flavor, excellent for slow-cooked and braised dishes.​

  • Hind Quarter – Offers leaner and more tender cuts such as loin, sirloin, and round, perfect for grilling and roasting.​

  • New York Strip (Striploin) – Tender, juicy, and well-balanced.

  • Tenderloin (Filet Mignon) – Lean and extremely tender. Best for special meals.​

  • T-Bone & Porterhouse – Combines the tenderness of filet mignon and the flavor of strip steak. Great for grilling.

  • Sirloin Steak – A leaner option that is ideal for grilling or pan-frying.​ 


Roasts (Great for Batch Cooking and Leftovers)

  • Chuck Roast – Perfect for slow-cooking, braising, and shredding.​

  • Sirloin Tip Roast – Leaner and ideal for oven roasting and slicing thin.​

  • Top Round Roast – Versatile and can be used in many different ways, such as in ground beef, or thinly sliced for dishes like Vietnamese Pho.​

Ground Beef

Ground beef from Speckle Park cattle has outstanding flavor and performs well in burgers, tacos, pasta sauces, and meatballs. You’ll typically receive a generous portion with your order.​
